March 20, 2026Biocant – Associação de Transferência de Tecnologia, through its Advanced Sequencing Unit led by Conceição Egas, has contributed over recent years to the BCheese project: “Integrated management of the production chain to ensure the traceability, authenticity and valorisation of Serra da Estrela cheese”.
Results were presented on 5 December at the final project symposium “The Serra da Estrela Cheese Value Chain: sustainability, authenticity and innovation”, held at the Instituto Politécnico de Viseu, where two key findings stand out:
✔️ the microbiomes of milk and cheese vary throughout the year
✔️ each producer has a distinct microbial profile, reinforcing authenticity and production traceability
These conclusions translate into direct benefits for the sector, enabling:
➡️ stronger quality control along the production chain
➡️ increased safety and confidence in the final product
➡️ enhanced identity and valorisation of Serra da Estrela PDO cheese
➡️ tangible impact for producers and for the region that keeps this tradition alive
